Context

Valorize cookie byproducts

Maison Le Goff is a historical cookie factory in the Morlaix region, created in 1950 with a know-how in kneading inherited from traditional pastry-making, transmitted over the years. Very involved in the food transition, the company offers organic ranges, works on the use of more eco-responsible packaging and is committed to the convention of companies for the climate.
During its manufacturing process, the SME generates production “waste”: raw or cooked pieces of dough. Reducing losses and finding a second life for the remaining by-products are the objectives set.

Limit, recycle, qualify, quantify and value

Since the first observation was that the best by-product is the one that is not produced, Upcyclink’s first task was to study the performance of the production lines and to rationalize the internal recycling of raw and cooked by-products.
After the implementation of prevention and internal recycling actions, a precise material balance of the products and by-products of the production site was made by Upcyclink.
Following this assessment, the full cost of the by-products was evaluated according to the MFCA (Material Flow Cost Accounting) method. This assessment also made it possible to evaluate the share of each by-product and to target priority actions on unit operations to collect the by-products and to allow their valorization towards the adapted channels (catering, ice-cream makers, animal feed, …).
